Baked Ricotta and Mozzarella Calzone…I had some leftover ricotta cheese from making some bulk raviolis the other day. I have been storing like a half a dozen pizza dough balls on call in the freezer now so I can make pizza on the fly.
I rolled out a pizza dough and made 2 calzones stuffed with ricotta cheese and shredded mozzarella with red pepper flakes and fresh basil. I am real happy with the way this came out. The calzone was just the way I wanted. It was light but still firm and a little chewy on the edges. I ‘ve had calzones before where it just more dough than stuffing, and where it was just so thick, and dry. This has a lot of potential for tasty stuffings, like my all time favorite – chicken rolls.
